A couple of notes and/or warnings:

You can of course not push the out racking cane into the liquid at first and just run CO2 so as to purge the oxygen.

Don't use a lot of pressure. I use only a few pounds and I monitor the bulge in the carboy cap and I often turn the CO2 off and on. Carboys aren’t rated for pressure. The cap always seems to pop off very easily, but with all the talk about breaking glass I thought it’s worth mentioning. You can pull the feed line off one things start but I’ve found that sudden changes in pressure aren’t good. One time I stopped mid-rake and the out tube drained. The sudden change in pressure lifted a rather large yeast cake up into the beer.

It’s best to have the second container lower and use gravity.

You might want to do a few test runs with water.

Hey,

That is a great idea on pushing fluid out with CO2. But, let me ask those of you this. How did you have leaking problems with the spigoted buckets? I have been using these as primary fermenters for 6 years now and I have only had say one infection and it was from lack of cleaning. Ofcourse I replace the buckets AT LEAST every year and sometimes biannually. And I have never ever had a leak except when I once left the valve open while filling the bucket post chilling. Are you not tightening the nut on the valve enough, or are you using old and cracked gaskets? Also, I would never ever clean a plastic bucket with bleach. That is a sure way to get permanent bleach smell in your bucket. Use PBW or oxyclean the cheap equivilant. But this is just all IMHO, so take as you will.
