The only thing about a wooden dowel (or mash paddle) for measuring wort depth is that while it's absolutely fine for pre-boil or during the boil, post-boil I don't trust sticking anything porous into my wort, no matter how long it's been sitting in the star-san. I'm sure plenty of people have done it that way for years. I still think the textbook answer is its safer to use something metal (ss or copper) or a nonporous hi-temp capable plastic.
Just something to think about.
