I'd go bigger. You don't have to use it, but it's nice to know its there.

Is there a big difference between Stainless Steel and Aluminum? Im guessing SS lasts longer but why don't people get aluminum if its cheaper?

SS is completely "neutral"
But for beer Aluminum is fine, many have missconceptions about aluminum.
