We use converted kegs and whirlpool. We'll pull the wort from the bottom of the kettle, pump it into the CFC, and then return it back into the top of the kettle. It takes 20-30 minutes to cool it down and then we'll let it sit for 10 more to settle.

Works like a champ.

whirlpooling

now were talking, thanks guys .
As far as the plate chiller is concerned I think it would still cool quicker than an immersion chiller, the only draw back may be flow but I don't think so.
But J.brew what's a diverter?? I can imagine several things, but would like to hear your version of it.
There was something in the brew kettle I saw at the brew pub, it was a vertical plate in front of the drain about 3 or 4" high from bottom to top and welded to the bottom of the kettle and maybe two ft long ( talking 15 bbls now).
If you listen to any fool long enough you will learn something.
