yup. just a fancy hand powered agitator. Wort Hog has a motorized stirrer/agitator for his HLT (B3 thread).

quick q- at flame off is DMS still being driven off and tainting the condensed steam or is DMS being produced and simply staying in the wort?

most of yesterday was a lot of teeter tottering between fabricating in copper or SS or rigging something from existing products.

Some of the interesting crap i saw :
Image --13-5/8" long, 8 x 3-1/8" head, Polished handle, Heavy gauge stainless steel , $8. If i used this with the funnel, i'd need to extend the handle another 12".

Image -- attached to a long shaft and drill bit. it's low profile could allow it to be raised above wort level once a nice whirlpool is going.

Image -- this would be sweet as it looks like it could double as a racking cane (no kettle spigot for me) but idunno if that plastic would hold up under high heat.

for fabricating in copper, i'm at a loss what to make the blades/paddles out of. It looks like Wort Hog used some thin SS sheet/plates and slides them on and off. any other ideas?

You have some interesting ideas my suggestion is to prototype a few see what woks best I have built half a dozen sparging arms before I settled on one. Then Denny convinced me to batch sparge go figure.

I would use the bottom stir bar. You could just wait until the wort is cooled to about 150F to start your whirlpool. I usually wait til it's cooled a bit anyway. It burns my hand when I start shoving it in to mix with. JK.
