Converting kegs

So I am in the process of converting kegs to use as my 3 vessels. I was going to be welding ball valves on. But I feel like I am missing something when people say they can remove them for cleaning. Any help would be appreciated. As for the temp guages did you use the weldless fittings or weld those on as well.

Most people weld a pipe nipple on then screw on the ball valve.
Same with the temp fittings

You want to weld in 1/2" couplers to accept the valve and thermometer.
