I would like to maintain 68. If I take it out of the fridge, it gets to 72 in my house. Plus in the winter, I turn my heat down at night so I get big temperature swings.

There is nothing magic about 68 F for the diacetyl rest. It also works at 72. In fact, I do mine at 72 F quite often these days.
