Whirlpool ala Jamil

So I am considering a whirlpool/cooling system similar to what Jamil has on his web page. My question is how do I draw the wort off while leaving the cold break material behind? Just draw from the bottom side or would I need to pull from the top? I've never "whirlpooled" before, so am I just over thinking this?

The whirlpool will get all the break and other sediment to fall into a pile in the middle of the kettle. You can then pull clear wort from the side. I don't ever bother, but that is my understanding. Also you have to wait for about 30min when you stop the pump to let stuff drop out (I think).
