i was going to suggest this too. anywhere you've got a water supply there's a valve you can tap into without doing anything irreversible (i.e. no cutting or soldering). if you're really paranoid you can take out your fittings when you move out and nobody will be the wiser.

you should be able to go under your faucet or even down next to the toilet and put a T fitting AFTER the valve and hook up your chiller from there. I did exactly one full volume boil trying to chill with an ice bath then immediately placed an order for an immersion chiller.
