So.....how do you purge with nitrogen, then vacuum seal?

There are those incredibly expensive cans that you use to preserve half opened bottles of wine. They contain nitrogen and argon (and possibly others). You can squirt a little bit in there - then put into a FoodSaver, so any "residual" is inert. I'm not sure it's worth the trouble or expense. Hops don't last forever.

If you are all that concerned you could purge the bag with CO2 and then vac and seal.
