I just gotta say , this was a great interview and extremely informative.... It's amazing how much info can be picked up from an interview with the brewmaster ... I mean they covered a lot from hop utilization to recipes to techniques of german breweries.. and Justin .... Great job bringing this to us.I really enjoyed this one and all I can say is keep em coming. :lol:

Yeah that was a great episode! I'm almost shocked at how much he knew about all the operations. It seems that sometimes you get guys on there who don't remember recipes, can't tell you gravities, hops, additions, etc. You can tell that guy is involved in everything! I wish their brewery was close to home, I'd be going there weekly applying for jobs!

I would be interested in seeing Tasty's recipe for Celebration Ale. I calculated out the hop additions Steve gave for his recipe but it just doesn't seem right. I would assume more hops would be needed to get the hop aromas they get.

I was at one of the beer camps (the golden ticket baltic porter one). They were dry hopping celebration when I was there. If i remember correctly, they dry hopped in large nylon sacs at about 35F. There was frost on the outside of the tanks where the celebration ale was in. We each tasted it from the zwickle and it was cold. I wonder if cold dry hopping is better?

Just now tasting my celebration brew. I didn't have chinook so i just substituted with summit. The malt profile and body go right with sierra nevada's. I brewed this 17 days ago so its super young and very bitter. I have had SN celebration as a very young beer (while it was being dry hopped at SN), and their beer is insanely bitter at that point. I just think that my beer needed more dry hopping to get the same aroma as SN. SN uses the hops when they are super fresh and have a better aroma. My attempt may be lacking the hop aromas because some of my hops are 2 years old.
