Pond scum in my kettle??

I did an all grain Rye Saison yesterday, my first time using Rye. 9# Belgian Pils and 3# Rye. I milled it twice at Morebeer. During the boil, I kept getting large clumps of this disgusting scum like material. It reminded me of when my wife boils something with a lot of fat on it. I only use the kettle for brewing, everything was clean. What the heck? Ive never seen anything like that before. Thanks.

If you started with a clean kettle it's likely from the beta glucans in the Rye Malt which sounds fitting considering 25% of your grist was Rye and 75% was Pilsner. The Pilsner malt shouldn't have added much protein or color which likely helped the beta glucans stand out even more. Sounds tasty though.

Thanks, I was hoping it was something like that. Maybe my double milling also?

+1 - those are proteins and glucans and one of the reasons step mashes help these beers.

Hmm I ran almost exactly the same recipe about a week ago and didn't see anything odd..
