True, true. My brewing became quite predictable when I got a consistent outflow rate. The trick I use: out of my 1/2" npt mash tun valve, I adapt that down to a 1/8" hose barb and through small diameter tubing. Then I can have the valve wide open (not have to throttle it to the desired flow rate) and not worry about it.

Fly sparging is not for the timid, but well worth it once it's dialed in.
