There was a study released that found that a long hot stand/whirlpool combined with dry-hopping resulted in the best hop flavor and aroma. Ray Daniels talked about it in an NHC presentation. If you want the most out of your hops, I would ditch the bag.

At what post-boil temperature should one start the hop stand?
