I'm not sure how, but he malts the buckwheat himself. I think he said something about using a food dehydrator.

It should work for a pale roast. Additional color could be added by roasting the grain in the oven. But I can be wrong since I haven't tried this and don't plan to try this either. It was also mentioned that the green malt should be placed into a pillow case that is tied close.
