Ive noticed all of my beers smell like rubber when in the primary, always thought it was the stopper. The smell seems to go away and have never had any problems.

Using a corney dip tube ($3.00) makes a great thermowell when combined with a rubber stopper. Fold the end of the dip tube over itself a few times to seal it up. Silicone if you want.

As for the banaha.... I made a wheat with Wyeast 1010 a while back. Used yeast saved from a keg.... mistake. the yeast morphed into something else and gave off huge banaha. It was even fermented about 66-68 F. I dumped the keg (prematurely) and put 30 or bottles away for several months. Opened a few the other day and the banaha is all gone.

The banaha is an ester, so ferment low to keep it under control.
