Using a corney dip tube ($3.00) makes a great thermowell when combined with a rubber stopper. Fold the end of the dip tube over itself a few times to seal it up. Silicone if you want.
As for the banaha.... I made a wheat with Wyeast 1010 a while back. Used yeast saved from a keg.... mistake. the yeast morphed into something else and gave off huge banaha. It was even fermented about 66-68 F. I dumped the keg (prematurely) and put 30 or bottles away for several months. Opened a few the other day and the banaha is all gone.
The banaha is an ester, so ferment low to keep it under control.
