I just pour them right on in. I don't worry about a bag, just rack off of them.

It was actually my brother, notagirlsid's, idea. It really gave us good control on the amount of coffee flavor without watering down the beer. We would add a couple tablespoons at a time and taste until we got our desired flavor. We also kept a sample of the non coffeed beer to see the difference. I'm not sure how this would work for the nibs, I don't have a ton of experience with them. If you do it let me me know how it works

Local brewery here makes a porter infused with coffee and chocolate. Both the coffee beans and chocolate go in the bright tank, and sit for 16 hours. This is the extract they use: http://www.olivenation.com/Pure-Chocola ... 88C55.aspx The coffee is locally roasted, and cracked the day of transfer, and placed in muslin bags before placed in the BT.

And it tastes awesome btw!!!

I brewed a coffee porter and decided to add the coffee to the mash. Yup the mash. My thinking was that adding 6oz or whatever of Crystal in the mash, you can taste it. It doesn't burn up in the boil....why would coffee be any different? If it was to low on the coffee attributes that I was looking for I would just add more coffee after fermentation.

Since that time, I've brewed 2 more beers this way. I love it. It gives the beer a coffee backbone that I can not get in any other way.
