If you use a carbon filter, filter slowly (can't remember the recommended rate).
Easier is to use metabisulfite - Campden tablets work OK but they are hard to crush and dissolve slowly. Better is powdered or crystalline metabisulfite - dissolves almost instantly. Metabisulfite crystal and Campden tab both come as either potassium or sodium salts. Potassium is probably better, especially if you already have significant sodium in your water.
As far as dosage, I've seen that one Campden tab is good for 20 gallons of water. I think that's about 1/8th teaspoon of the crystal metabisulfite.
