Diacetyl rest?

How does one know where 75% of your fermentation is done for a diacetyl rest?

Welcome-

The easiest way is to measure your OG, subtract your expected FG from it, and then when your gravity gets 75% of the way, that's when you start your D-rest.

example:
1.050 OG
1.010 expected FG
50 - 10 = 40.

40/4 = 10

1.020 is the 25% level, start diacetyl rest when your gravity hits that.
