Baltic Porter yeast question

I have a question regarding which yeast to use for my recipe. Most of what I've read says to use a lager yeast. I can't really get my carboy to the cooler temps required to lager. Are there any good ale yeasts that I could use at a warmer temperature for my baltic porter? The estimated OG is going to be around 1.090 for it.

How low CAN you go? 58F? 60? 62F? 65? 68?

Baltics really do better with lower temps. Wyeast 2112 (Cal Common yeast) would be one that would work if you can get it down to 58F.

You want the cleanest yeast you can get - WLP001 at 65F or lower would work.
The higher the temps, the more esters you'll get. The lower the temps, the cleaner and more realistic it will be.

Haha. Thanks for the quick reply. I can keep it downstairs in a tub of water and she'll probably hover around 66-68. Thats the lowest I can get.

If you can drape a t-shirt over it so the water wicks up and then blow a fan on it, it'll drop at least another 5 or 6 degrees due to the evaporation.
You should be able to get down there if you try.

Personally I'd hold off until either the weather or your gear can handle lagering. A Baltic Porter is a straight up lager & not a hybrid... they just don't taste quite right otherwise. For an ale version, I'd think about doing an RIS or an imperial twist on a brown porter. Just my opinion.

For a true Baltic, 885 Zurich is the way to go. If you decide to go the ale route & tone down an RIS/bump up a brown porter a touch 001 Cal is good or the 028 Edinburgh would help bring out some malty goodness. You could make a good beer that way, but it just won't be a Baltic.
