No, I'm going to add priming sugar to carb, only using the cartridges to dispense, since I'll only be serving it at portable type events anyway, but I wanted to be able to hit it with some CO2 to purge the keg before I fill.

Dupont is indeed a pain in the ass to work with, but i think it's the best saison yeast out there. BS and 3711 are really easy to use but don't quite measure up. to get around Dupont's fermentation issues, i use it as my primary yeast, get the initial flavor blast from its growth phase, wait for it to stall out in the 1.030's, then use a secondary yeast (typically 3711) to finish the job. best of both world but a bit more expensive because i need to buy 2 yeasts.

Pfft. Just over fill it until beer comes spilling out through the lid opening. That'll get all that O2 out of there. Ask me how I know.

Finally kegged it... hydromination says that this puppy is ~10.7%. Sessionable.
