Even a small stir plate should be able to handle a large flask, as long as it can move the stirbar you are using. however, you may need to build it out a bit to support the flask. This could also get around the heat issue if you have a gap inbetween the flask and the plate. Think shallow box with a hole cut out that the stirplate inserts into. The box provides the platform the flask rests on.

Lol, finally a solution to my 30 gallon starters

I have two of the brewers hardware stir plates, I did a 3.5 liter starter in a gallon jug with one. I found the small stir bar (25mm?) with the centering ring worked the best in large volumes.

They work great, just takes forever to get them.
