Thoughts in Dubbel

So, 10 gallons of Belgian Dubbel brewed 2-weeks ago with a slightly overshot OG of 1.071. Pitched appropriate starters of WLP530 and WLP575 into each carboy and ramped up from 64F to 70F over the subsequent 6-days. Today my FGs are WLP775 1.013, no krausen or foam on top, but a fair amount of yeast in suspension); WLP530 1.020, some krausen left and still bubbling, slowly. I have taken the WLP530 batch to 71F and begun to rouse the yeast each day.

Any other suggestions? I am planning (if all goes well) to keg next week; let cold condition for 2-weeks in the keg then clear (in the serving keg) with gelatin.

I'd say go even hotter - maybe to the mid 70's. I've taken my Belgians into the low 80's before. Once you're past the initial growth and well into fermentation you don't have the concerns of producing fusel alcohols like you do early on.

Thanks....I am going to press on up at 1 more deg per day to 75 then let it rest a couple days. Rousing the yeast each morning by swirling the carboy...

Up to 73F today. The krausen has finally fallen, but I've been swirling the carboy every day. I also just remembered I have the blow-off dregs in a 1L flask coveren in saran wrap in the fridge. I ran the blow-off hose to a sanitized 1L flask that I mostly covered the opening with foil during days 3-7 of the ferment. The flask has about 1inch of off-white yeast sediment on the bottom and 1/2 inch of clear beer.
