Cold crashing from the primary...

Wed Feb 03, 2010 2:00 pm

My Alt is done with primary fermentation so I placed in my chest freezer to cold crash it. I was going to keep it at 35 or so for a few days then transfer it out.

My question is, if I transfer it to a secondary (instead of bottling right away), should I let it lager in the secondary or keep at room temp (65 or so).

This is an Alt, not a lager, but I have read that the yeast (wlp029) shares a lot of lager yeast characteristics. One being a slight sulphur odor that goes away with time.

My fear with lagering is that there won't be enough yeast in suspension to carbonate after I bottle. I would only lager for a few weeks, so is that not a problem with such a short time frame?

Thanks

When i cold crash beer i wait until it is clear enough for me (usaully 1-3 days) then just rack to my bottling bucket and bottle. using that technique i don't need to worry about losing all my yeast. 2 week lagering is pretty hard on a ale yeast and may need a repitch to bottle condition.

is there a reason you would like to move it to a secondary??

I do not know what I am doing wrong, but it takes 4-6 weeks in the keg before I begin to like the beers I make.......I do not think I could ever go just 3 days before going ot bottle.
