Buy the 27 & adjust your batch size. 22g would be fine for the 27. Or pump out 11-12 consistently for the 15.

If you have ever seen the open fermentation tanks at Anchor . Inside a climate controlled filtered room. The beers ferment with Plenty of head space. i doubt they worry about it.
My concern would be where and how you plan to regulate temps . On the heated and cooled models , the cooling units might be too high and wouldnt be in contact .

After reading through everyone's suggestions, I've talked myself out of a morebeer conical. I'm thinking an 18 or 20 gallon conical is really a more optimal size for me. Thanks everyone! I guess i'm on the hunt again for a conical vender.

Good luck. Conical sizes are pretty standardized. It's much easier to adjust your batch size to the fermenter instead of hunting all over for something to fit an unusual batch size. That's like refusing to buy a bucket or carboy because you can't find one to ferment your 3.25 gallon batch in.

Rinse
Disassemble all the parts
dip everything in star san
Reassemble
