New Brewer from PA

Hello Everyone,
I’m a new homebrewer from central Pennsylvania (although I’m originally from Michigan), and over the course of a few short months, brewing is all I can seem to think about anymore! I’ve been listening to the podcasts, and reading through the forum enough that it’s time I introduced myself and joined in the fun!

Around April, a good friend of mine began brewing, and because he knew how much I enjoy making food from scratch, he told me I should look into homebrew. I began doing some preliminary research about the topic, picked up and devoured a copy of How To Brew & Brewing Classic Styles, and got up a basic kit from Midwest.

The above friend began raving about a great podcast (Brew Strong), and my newfound obsession really began to take off. Over the course of a few months, I listened to the archives of Brew Strong, The Jamil Show, and I’m currently listening archives of The Sunday Session.
I’ve only brewed a two batches at this point, because my second batch got destroyed by 85 degree and up fermentation temp (I have no fermentation temp control at this point, and no AC in my small apt). I’ve been holding off until I move into my new house soon to get a fridge and a controller, and starting to brew again. Thankfully my first batch (a Newcastle clone from Midwest) fermented at a better temp, and although it wasn’t the best beer in the world, it was definitely drinkable; and I loved it.

I’m currently using a 5 gallon stainless kettle, a 25 ft copper immersion chiller, and 6.5 gal carboys. I also just picked up a 2000 ml Erlenmeyer flask so I can begin doing starters. After the fridge and controller, I’m going to move to a full boil with a floor burner. I can’t decide if I want to go all grain, or begin kegging first (any advice?). I’m already building a MLT (a 36 qt insulated cooler with a slotted copper manifold).

I just wanted to say what an amazing forum this is. Not only Justin and crew, but everyone on the forum, you guys and girls are the best!

If you are really itching to brew again, look into brewing a saison. You can let fermentation temperatures on those rise into the 90's. Just set your fermenter in a tub of water and wrap it in a wet t-shirt to control the temp by evaporation for the first couple days and then just let the temperature rise to what ever it wants for a couple of weeks. The thing to remember is to be patient. Saison yeast sometimes likes to take a long weekend and do absolutely nothing for a couple days before going back to work. Just be patient with it. Don't worry about it taking 3 weeks or so to hit final gravity. The wait will be worth it.

Thanks for the tips, but luckily I'm moving this weekend.

I just picked up a second 6.5 gallon carboy, and I've got my next two batches planned out. I'm going with Morebeer's American Amber Ale and their BN Brown Ale.

I can't wait to brew again, I'm already obsessed with this hobby!

Where, exactly, do you define "Central PA?" I grew up in the Altoona area, which is Central PA. However, I now live in Eastern PA (Elysburg), which some people here call Central PA.

I'm in State College. There is going to be a micro brew festival out here in a few weeks, which I'm getting excited for.
