It's just generally inaccurate, regardless of viability. I use it for a rough estimation. It'll get you close enough to say pitch or no pitch, which is what I'm going after. It'll definitely identify a healthy colony from an unhealthy one fairly easily. 90% vs 92%... who cares if you're just brewing with it. I would like to have the lab equipment to do it, but not because it'll make a difference in my brewing, just because I'm a nerd like that. I'm already thinking of some torture methods.... er... experiments for my yeastie pets. :twisted:

I use Alkaline Methylene Violet from White Labs. Supposed to be more accurate.
Next:
Fermenting: Cider, Azacca Oat Pils, Egregious-ish, Lambic, Carrot Blossom Cedar Mead, Brett Helles
Drinking: RIS, Doppelbock, Sauerkraut Gose, Lambic, Brett Blonde, Kriek, Saison, Rye Berliner
Barrel aged: RIS, Rye Barleywine, Tripel

Many of the dry yeasts give rehydration instructions for commercial brewers, but leave them off packs sized for homebrew. It is the rehydration that the OP was asking about.
