Maybe if you were more specific about what you are asking? Me, I handle winter seasonals with a big middle finger if it's too soon in the season, when I answered. When they are in season, I handle them a bit more gently.

It's all good, I was just looking for what others do when planning for their winter beers. Wasn't looking for anything specific.

I did an old ale last year an plan on doing another one for this winter.

Not sure if a straight answer is allowed here, but I'm planning an Oat Wine. Probably brew it just before Philly to let it age. Perhaps an old ale as well--with about 2 weeks on french oak to get some vanilla and tannins. Problem is all my kegs will be tied up with NHC, so I guess I'll have to let those sit in fermenters for a few months.

As for process, nothing exotic. Mostly just the age factor.
Fermenting: Brett PA, Sour, Rosemary Singel, Lemongrass Singel
Kegged: Old Ale, Calypso Saison, Tart Cherry Farmhouse Braggot, 3711 Pale, Blonde, Imperial Porter
On deck: Session Pale, BN Porter, APA, Citrus Saison, Pale Mild, Blonde

I brewed a big rye barleywine (1.130 og) back in January for consumption next winter and for 2014 NHC. Brewing big beers a year ahead of time is about the only planning I do for winter beers.
