3 should have been ok, but try it with 2 at first if you are going to change something.
I probably shouldn't have told you 1 gallon without knowing how much grain you are using.
2 to 3 qts per lb should be decent.

Where do you live? Maybe somebody close knows what your water is like and they can offer a water treatment if its necessary.

If grains/husks escaped the bag and ended up getting boiled, that could contributed to astringency as well...

Excellent point. Never thought of that, but a very possible culprit. The amount it would take to show up as an off-flavor could be overlooked easily or be masked in the break/hop material. I sure don't sift through the sludge after the boil. Shit. This is going to spark another OCD moment on my next brew day. "Oh yeah, there goes Oz with his wire colander & trub again."

With steeping a sack for an extract batch, I certainly notice a lot more 'bits' floating around than when I do all grain with a good vorlauf.

I seem to recall bits of the endosperm occasionally liberating itself, never had the problem with husk material. But it's certainly possible.
