I decided to brew Baltic Porter.
I can use ale yeast right ?
I have something in my mind for a recipe:
5 lbs Munich
5 lbs Vienna
2 lbs Victory
0.5 lbs Chocolate malt
0.5 lbs Dark Brown Sugar
1 oz Mt. Hood @ 60 min
2 oz Saaz 15 min
so for yeast I know I suppose to use Lager yeast
but I have no low temp control so it will have to be ale yeast
I'm thinking one of English ones

I like the German Hef Idea a lot. I want to brew one of these myself sometime soon.

I started with partial mash and wound up having to get a lot of advice before I was ready to brew my first solo batch, and even then I was worried beyond belief. I didn't even have any homebrew to drink yet!

Now I've had some success and have some homebrew to drink, so I'm trying a hoppy red next. I'm anxious to brew a hef though just because I like them!

Do let us know how this turns out.

oh yeah I have a sweet stout in primary right now, it was pretty easy overall and after two weeks the gravity sample is about on target and tasted pretty good. I'm leaving it one more week. So yeah, consider trying a low ABV stout for your first partial mash brew.

An english ale yeast will be fruity. I'd suggest you go with Cal Ale (1056/001/us-05) instead.

What are you using? Mesh bag? Are you doing full boil?

I'm using mesh bag but now thinking of just straining it through fine colander. Can I do partial boil as I'll take half of my grain - mash it, then do another half?

If you are using an ale yeast, you need colder (longer) fermentation to retain residual sugars. The Cal ale or 1056 will be clean with low esters which is good. If you can't find cooler fermentation temps then you need to add some residual sugars. Try steeping some melanoidin malt too. Please post a Youtube video so we can watch you brew!
