I checked the gravity today and it is at 1.013. I am still getting VERY regular activity in the airlock, a bubble about every 15-20 seconds. Would it be a good idea to crash this and start letting it clarify or would I be better off letting it continue at 60F for 2 or 3 more weeks to condition. I know this yeast will take a while to settle out, but is there any reason not to crash it once it's done fermenting? (BTW I am aware that it isn't finished yet)
