This is a strange question. I've noticed with 2 of the beers I've brewed so far that after a month or two the flavor will drop out of them significantly. I brewed a APA that was great 4 weeks after brew day that lost its flavor and started to taste thin and watery after 8 weeks. Same with a hefe I did.
Anyone ever experience this? Is this some sort of infection? Is this common with extract brewing (my next brew will be all-grain)?
I know these beers are meant to be drank sooner rather than later, but I would have expected them to have some good flavors even after 2 months, but they really just didn't.
