carbonate a stout?

Mon Apr 28, 2008 5:46 am

I am ready to bottle an oatmeal stout and need some help with a carbonation question. How much sugar should I be adding to each bottle? I have found that with my pervious styles, the beer was over carbonated.

None. You should be adding sugar to the entire 5 gallons at once immediately prior to bottling. Adding to the bottles is more time consuming, and it's difficult to be consistent with the small amounts--add just a bit too much to one and you can have an exploding bottle. 3/4 cup corn sugar is the standard amount given for a 5 gallon batch, though this is for a beer with average carbonation and you can vary to produce more or less carbonated beers. BYO has some good charts you can use.

Thanks for the info. I have done a batch prime for my previuos brews and this time I primed each bottle seperately. I used 1/2 teaspoon each bottle (instructions called for 1 teaspoon). Found it a little easier to prime each bottle and figured there was less chance in airating the wort. ABV measured 6.1 % so it is nice tasting and strong.
Can't wait to have my first one in 2 weeks......have to start kegging

+1 on the do it all at once thing....

as an added note, boil up your sugar solution and add it to the bottling bucket and THEN rack the beer on top of it. don't do it the other way around - too inconsistent in terms of mixing.

I've found that 2/3 cup Bakers' Cane Sugar (finely ground, but measures out the same as table sugar) is about the same equivilant as the 3/4 cup of corn sugar. I haven't noticed a difference, and it's pretty cheap to buy the cane sugar in bulk. Especially if you're bottling when your LHBS is closed.
I use 1/3 cup Cane sugar for my stout recipe, and that is just right.
