I thought beer yeast were around the 1 micron or smaller in size. A 7 micron filter may get large protein and hop particles, but in your experience does it really filter out yeast?

I claim it filters out yeast but I don't really know. I've filtered my Hefe with the 7 micron filter and it was clear as I'd ever want a beer. If the haze contained yeast, then it filtered yeast. All I know is that I don't need to use 3 micron pads. I typically cold condition my beers a week before I filter. That may drop out the yeast leaving the rest for the filter. But I have racked, filtered, force carbonated, and served clear beer the same day. That was my 1.057/WLP001/Northern Brewer/Centennial American Wheat. 6 days from flameout to glass.
For many, the "long" in Longshot seems to describe the wait more than the odds. From my perspective, I've always got something going on with homebrewing that keeps my mind off the fact that it won't be released until February 2009. I'm currently looking forward to the July release of the GABF ProAm beer I've been very fortunate to get to do with Vinnie Cilurzo.
