Root Beer Extract

I want to start having a keg of root beer on tap because, frankly, I love the stuff.

I know there are alot of extracts out there, each one with its own characteristics... is there anyone who makes Root Beer out there who has a preference or a recommendation for a certain extract or recipe?

I like creamier Root Beers as opposed to dry or overly sweet ones. I was thinking about splitting a batch and adding a little vanilla extract to one of them.

The shop I help out has three diffferent brands. I think the idea of playing and mixing your own to find what works would be great especially since you could make a quarter batch (1 gallon) in a keg and then adjust and remake until you got your ratios right for your preference.

I've tried several and so far like the McCormack extract from the grocery store the best. We make it with a couple of lbs of honey in place of some of the white sugar, vanilla, and whatever dark sugar I have around the house at the time. I've tried adding a little molasses but didn't like it - a little of that stuff goes a long way.

I have a sack of maltodextrin from the HBS to put in the root beer, but keep forgetting! Hopefully that will make it head up like a beer.
