interesting re: 3rd type of cleaner, more attenuative yeast. Did you ask if they used the 3rd one w/ Union Jack?

The third yeast is the Nectar yeast, which they said might be a mutated Sierra Nevada yeast when I was there not too long ago. Matt was pretty clear in the interview that Union Jack uses their English ale yeast strain though. I'm getting set to brew the UJ recipe (as close as I can) this weekend but I have doubts that I can get enough attenuation with 002/1968. He says it's similar to fullers but then mentions that London Ale would be a good choice, so maybe 1028? 007 is also described as similar to 002 but more attenuative, so I was thinking of maybe going that route. Does anyone remember what they said about the yeast in the recipe section of the show?

I am planning to brew the FSW Pale 31 recipe soon and am going to use the WLP 007 strain for the 1st time. I am wondering if mashing at 145 f and fermenting with 007 will make the beer too dry. I am thinking of mashing at 150 f. Any thoughts?? Wish I had some DBA to blend with the Pale 31.... :aaron

I mashed my UJ-like IPA at 152-3 and 007 fermented right right down to the 1.014 that Matt mentioned as a target (well, I think he said under 4P). It's a good attenuator, so I would definitely not mash at 145 and expect to get a lot of body left after fermentation. This beer needs those dextrins to balance all those hops. They mash that low because their yeast isn't a good attenuator, but I see a higher mash temp and 007 as an easy way to get to roughly the same end, though all the clone attempts ended up being with 002 and the low mash.

there is a clone recipe available from More Beer for Double Barrel Ale, and it says Matt recommends WLP 005

005 is kind of middle ground between 002 and 007 for attenuation

Why mess with different mash temps and yeasts? Tasty mashed at 145F and used 002, and nobody in the room could tell a difference.
