Hey guys. Has anyone had success making a caramel porter/stout. I had a great version from Saranac a few months back and of course now its not available. I want to brew some and I'm not sure the best way to add caramel to the beer? Any ideas?

Thanks

Riley...

Caramel extract perhaps? It's made for cakes/cookies/puddings etc. so I would imagine you'd get some good flavor out of it.

Use a large percentage of british caramel malt of approximately 75 lovibond. A pound to a pound and a half in 5 gallons should give you a big wallop of caramel flavor. You can also take your first runnings and boil them hard for about 30-40 minutes to get some kettle caramelization.
