Alright guys,
Thanks for the ideas. I tweaked what I had originally and am going to brew this up next week. According to tastybrew.com, the numbers all work out. Anyone have any last minute ideas or words of wisdom? Here is what I got.

20% roasted malt is WAY too much. It will probably be pretty acrid and astringent. Cut those in half and you're getting closer and you could try adding the roast for a quick steep so you don't get as much harshness.

Partial mash?

The meadowfoam flavor is great, but really delicate. I don't know that the flavor would stand up to a stout.

Yea it's a partial mash. I just dont have the set up yet, to go All Grain. After looking at the roast levels, I totally see what you are saying. I'm gonna cut the weight and steep it. As for the meadow foam, does anyone know a good or better way to bump up the marshmallowy "vanilla" flavor?

Steve Altimari at Highwater Brewing makes a pretty great S'mores stout callled Campfire stout.. You might be able to ask him for tips. He's pretty available on twitter/facebook.

A local brewery makes a a'mores stout and they add Graham crackers into the mash and chocolate bars and marshmallows into the boil.I haven't had it yet but people were raving about it
