S'more Stout....... anyone?

So I'm really intrigued with the idea of a S'more Stout. I know it has been done but not real sure who has had success. I put this bill together tonight with hopes that the BN gurus could help me out. What are everyones thoughts? I'm looking to hit the key S'more points of chocolate, mashmallow, gram cracker and a smokey finish. What do you think?

Partial mash:
1 biscuit malt
1 chocolate malt
.5 flaked oats
.5 crystal 80
1 pale 2 row malt
1 roasted barley
.25 smoked malt
.5 Honey malt

Added fermentables
3 Dark LME (boil 60 mins)
1 milk sugar/lactose (boil 60 mins)
.5 Dark Brown Sugar (boil 60 mins)
.5 Molasses (boil 60 mins)

Hops
1 oz williamette hops (boil 15 mins)

Additional
1 Whirlfloc tablet (boil 15 mins)
12 oz cocoa powder (boil 15 mins)
1 lb honey (boil 5 mins)
.2 oz cinnamon sticks (2 sticks) – (boil 5 mins)

WLp002 English Ale

Secondary
2.5 tsp vanilla extract
8 oz cocoa nibs

There's a type of honey that gives a marshmallow flavor. Wish I could recall the name as I've been wanting to try some out for myself. Could be a nice touch to the recipe.

Other than that, I would have reservations about putting the cocoa, honey & cinnamon in the boil. My first thought would be whirlpool additions & maybe even moving the cinnamon to secondary. Overall the recipe seems rather busy. I think it could be simplified quite a bit & still produce the result you're looking for - such as eliminating the brown sugar & molasses. But there's always something to be said about kitchen sink beers.

I agree that you could simplify the recipe and get the same or similar results. I'd use a light DME. Your chocolate malt and 60L will give it plenty of SRM. They do make a marshmallow extract that could help with the flavor. Not sure where the cinnamon or molasses comes into play unless your looking more gingerbread than graham cracker. Interesting idea though.

Short's Brewery in Michigan makes a S'more stout, and it is fantastic...good luck and let us know how it turns out.

From what I can tell, that would be Meadowfoam Honey. Supposed to taste like marshmallow and vanilla. Definitely unique.

Made a S'mores stout a few years back. Turned out pretty well, if memory serves, but that was many beers ago.

Started with a solid Sweet stout recipe & added some smoked malt for that campfire feel, honey & Victory malt for the graham crackers, some cocoa powder for the chocolatey goodness and some toasted marshmallows at the end of the boil. Actually toasted those suckers with a plumbing torch, talk about fun
