Here it Comes: Pumpkin Jack

Every year, I brew a pumpkin beer for the wife. Last year was a Traditional Bock but this year Im going with an Oatmeal Stout. I will brew this nice and early this year and let it age...2013 will be a Doppelbock (Pumpkinator).

10 lbs 00 oz - Crisp Maris Otter (77.3%)
01 lbs 00 oz - Briess Flaked Oats (toasted in oven) (7.7%)
00 lbs 10 oz - Briess 2-Row Caramel 80L (4.8%)
00 lbs 10 oz - Briess Organic Chocolate (4.8%)
00 lbs 07 oz - Crisp Roasted Barley (3.4%)
00 lbs 04 oz - Weyermann De-Husked Carafa III (1.9%)

02 lbs 00 oz - Libby's 100% Pumpkin (Flameout)
2 oz - Olive Nation Pumpkin Pie Extract (bottling)

0.700 oz - 12.6% AA - Magnum - 60 Mins

75 Minute Mash @ 152F
75 Minute Boil


Wyeast #1318 - London Ale III

I have heard that the Olive Nation pumpkin pie extract is awesome! Let us know how it turns out.

Sounds great.. I'm thinking i need to try something like this. Do you used the same pumpkin and spice base in all your yearly version?

No. Last year I did a Traditional Bock and used Libby's, cinnamon, and ginger. It came across as too "spicy." ( as I think most run of the mill pumpkin beers do) So this year, I'm going to use some pumpkin in the boil and in spa secondary while using the olive nation extract at bottling.

When I brew my pumpkin beers, I boil about 5# of actual pumpkin pulp (roasted first in the oven) in a large mesh bag (I think they are a 5 gallon painter size). If you have not used the Olive nation extract before I would be careful adding too much as it is quite potent. 2 oz even in a 6.5 gallon batch might be overdoing it.

I haven't used the Olive Nation before so I thank you for that info! My plan was to take a bottle of stout and add some drops until it reached my desired taste and scale up for the bottling bucket.

That is your best bet. A little goes a long way with that extract, but man is it awesome. My buddy and I are convinced that is what they are using in Southern Tier's Pumking!

Funny you mention Pumking. There is simply no way that they get those flavors in there using simply pumpkin and spices. Im also convinced that some extracts are used...Just not sure which ones! lol
