Kolsch Rocks

Brewed a Kolsch a few months ago and just tap it last week. It's an outstanding style of beer. I've never had a comercial version so I can't compare but my version is an outstanding session beer. I've notice that lately I've been favoring lighter beers lately. I've always been a stout, Octoberfest, Irish red, Alt person. But man recently I've been on a Pale ale, Budvar, pilsner kick. Has anyone else had taste bud swings since they started homebrewing?

I know exactly what you mean. I was on a big stout binge for a while there, but in the last few weeks I've had a huge craving for trippel's and wit's. Mmmmmmm......wit :D

Any chance you want to post that recipe? I just tasted my first kolsch this past weekend and now i must brew it for myself.

Or anyone else have a great kolsch recipe?

Well since you went to school where my Mom works how can I say no

The 1st batch was from Northern Brewer.

10 Gallons batch
18 LBS Pils
2 lbs wheat
German version of both prefered by style but I used Breiss pils and what ever the LHBS gave me for the Wheat.

Hops
Hallertuaer
3 oz 60 mins
1 oz 10 mins

90 min mash at 150 - 154

Kolsch yeast of your choice (Wyeast or White Labs

Now this past weekend I brewed a version from an older issue of BYO

10 Gallons
14 lbs Pils
2 lbs Wheat
1 lbs crystal 10l

Same mash schedule

Hops

1.5 OZ Tettnanger 60 mins
3 oz Hallertauer 30 mins
1 oz Hallertauer 10 mins

My LHBS owner suggested a little biscut malt and Spalt hops for a true Kolsch

The 1st receipe is a perfect session beer. Not malty not hoppy, and beer that my Blatz light drinking father even liked. Thinking the 2nd will be more pilsnerish.
