I have a raspberry tart from austinhomebrew.com and it calls for raspberry extract to be added when you bottle. I now have the ability to keg so I am doing that. I was wondeing, does the extract mellow better in cold or warm temperatures? Last time I made it i bottled and the raspberry taste was really strong after about a week. I let it sit for about 2 more weeks and it turned out to be one of my favorite beers. I can put it in my kegerator or let it sit at room temp.

It will probably mellow out faster at room temps due to a warmer conditioning period, but it will also be just fine in the keg in the fridge (my preference). If you don't want it so intense, then add less at kegging time. The beauty of a keg is that you can always add more if needed.
