GUYS, INTERESTED IN DOING A KOLSCH AND WANTED TO KNOW IF ANYONE'S GOT INPUT ON A FLORAL INGREDIENT TO USE. MY LHBS SUGGESTED HIBISCUS. I WASN'T SURE WHAT OTHER OPTIONS WERE AVAILABLE AND HOW MUCH TO USE - MASH, BOIL OR DRY?
ANY SUGGESTIONS WOULD BE APPRECIATED.

What about giving lavender or chamomile flowers a try? These can either be added at the last 5 min of the boil, or made into a tea or tincture for a little more control at packaging time. Just some ideas.

WHY ARE YOU YELLING? USE YOUR INSIDE VOICE. HAVE YOU HAD THE EAST-WEST KOLSCH FROM SAM ADAMS?

I have used Lavender a couple of times....I made a beer with fresh Lavender leaves and flowers 2 oz in the whirlpool with really great results, it was pronounced but not overpowering, could have used a bit more if you wanted it to stand out. Another time I tried dried lavender and used about 1.5oz and it was way to much. Use .75oz of dried or 2oz to 2.5oz of fresh lavender in the whirlpool.

Hope this helps.
