Wine Yeast by Shea Comfort

Just listened to this ( I know I am a few years behind, aired 11-23-08) on a plane. Does anyone here have a chart, or point me to a site, that lists the wine yeast characters and if they can be used for the full brew or needed to be blended. Many thanks.

Morebeers wine yeast manual. I think Doc played around with the wine yeast in beer and was underwhelmed. I expect the malt/hop flavors tend to dominate the delicate flavors that came through in the mead fermentation Shea was talking about in the show.

I've got a sour going right now (almost a year old now) that I initially fermented with a wine yeast. IIRC, I used Lallemand 71B. The beer had a very interesting flavor before I pitched the roselare blend. It reminded me of orange juice a bit, though it was quite yeasty when I tasted it. I think it could have been a very good beer on it's own, though probably not as dry as I would like since the wine yeast won't ferment all the sugars that beer yeast will.
