Wyeast 2565 and WL 029 fermentation.

Hey brewers I brewed a 10 gal batch of my Kolsch 2010 Gold (always used 2565). The LHBS had only one 2565 so I had to buy the 029. I have two fermenters going with 2565 in one and 029 in the other. Each fermenting at 60. What a difference!!! At day 4 the 2565 has a good krausen but the 029 never really got a good head on it, although it is bubbling away. Both had a 3day 2L starter that went good. I haven't taken a grav reading yet but after reading the 029 info, it says it has problems under 62. Do I need to bring the 029 up above 62? First time using 029.

I've used 029 in a few beers and always fermented between 62 and 64 with good results and a decent krausen. Maybe let it ramp up to 63 or 64? With ester formation and replication out of the way for the most part I don't think you'd run into any problems there.

From what I hear it stays clean below 65, and maybe above but I've never gone higher than 66.
