Wheat malts

I'm planning on doing a German wheat, dunkelweizen and a witbier in the new year. I'm a bit confused on all the different wheat malts out there. Can anyone suggest what types of malt I should be looking at for each of those styles? Is there a single malt I could get away with using for all three of those styles?

The first two use malted wheat like GR390 from MoreBeer. The witbier uses unmalted wheat like AJ30 from Morebeer, or you can get wheat from your local health food store and cook it yourself.

So the white wheat for the German wheat and a flaked wheat for the wit. Is the white and red wheat malt general purpose for most ales requiring wheat?

Malted wheat (I've never noticed if wheat malt tends to be white or red wheat) is pretty general purpose for beers containing wheat.
Unmalted wheat, red, white, or flaked, is used in witiber and lambic.
