Hefe yeast which one

Ok boys and girls I just racked my all grain heffe that fermented with the wyeast 3068 lots of clove and banana very much like a good german heff. So the Question is which yeast does everyone prefer the white labs or the wyeast I know one person around here prefers the wyeast. Pretty sure I am glad he talk me into the wyyeast. :D

I usually split the batch , wlp300/wlp380 While both are great beers, I always prefer the 380 (hefeIV)

Sorry, Henning, it's none of the above for me. If I'm doing a Hefe, I like to use either WLP 380 Hefeweizen IV or Wyeast 3333 German Wheat Yeast. I like the flavor profile of the WLP 380 slightly more but, from what I understand, it's pretty much the same yeast strain.

Which Wyeast 3068 BUB?

It is much different on the second batch than it is on the first. I submit the second batches for competitions. The first is for serving at home. The banana esters are much more subdued when not stressing the yeast by pitching onto a yeast cake of 3068. It aso allows the clove-like phenols come throug better. Also, ferment at 65 to 68°F, never abpove 70°F.

Just a side note: I split a batch a few years ago between 3068 and 3333. The beers won 1st & 2nd in category and the 3068 beat out the 3333. I think the judges preferred the more pronouced esters from the 3068. Thta's not definitive but worth relaying on these types of questions.

I must be from Uranus %*) My usual and customary hefe yeast is the Wyeast 3056. I find it has a better balance of phenols and isoamylacetate that go well with a traditional hefeweizen. Of course, YMMV, but give it a try and see for yourself! I pitch it at 60-64'F, and let it go up to no more than 68'F, and it produces a very nice easy drinking hef that reminds me of the Pinkus brewery's organic Hefe-Weizen. Tyal, and ilbcnu!
