No, but sounds risky - as in, unlikely that you will not have some scorching. I would recommend making the invert on the stove in a clad-bottom pot and stirring the entire time. Do it while you wait for the coffee to brew.
I made mine on the stove, then placed into jars and pressure-cooked up to 14 psi, then leave in the cupboard for use when I needed it. I also did this with starter-wort. Very convenient.
