Good evening,

Here is my deal... I have 12.5 gal of ESB that has been in the primary fermenter for about a month. I need to bottle about 2 G and will keg the rest. I knoy that they recomend 3/4 cup CS for 5 G but how much for 2 G. The beer is at about 58 F now due to a post fermentation temp problem... as neer as I can tell the fermentation went well, but a little high at 70F. Any how , tonight I will rase it back to 68 ish in preperation for bottling. How mych CS should I add to this 2G and HOW?

Go metric!

Here is why. 1g corn sugar ferments into 0.5g alcohol and 0.5g CO2. Your target for the beer is probably 2.5 vol C02 which is about 5g CO2 per liter. At 68F the beer will already contain about 0.8 vol CO2 as this is the CO2 satuation level at this temp and 0 PSI CO2 pressure. Which is about 1.6g/L CO2.

This means you need to add 3.4g/L CO2 through priming. 2 Gal are 7.56L. Hence you need to add 52g ((3.4 * 7.56L) / 0.5 )of corn sugar to prime 2 Gal of beer.

52g is about two ounces.

I hope I got that right and are not the cause for a bottle bomb ;)

3/4 cup corn sugar weigh about 4oz (according to a google search). This is usually taken for priming 5gal. According to my calculations, you need 128g (4.6oz) for 5gal. This is close enough to validate my calculations.

Of course you can also use a simple rule of three:

2 gal priming sugar = 5 gal priming sugar * 2 gal / 5 gal = 4 * 2 / 5 = 1.6oz.

Or just invest in a scale that measures, grams, ounces, lbs. For under $30 you can get a good digital one and they are of great use for measuring grains, hops, sugar, spices, balls, and tits.......oh wait. Those last 2 are just after a few too many brews.

or get Cooper Carbonation drops and do it by the bottle.

There are several ways to determine the exact weight of Corn Sugar, But I have found that one pound of corn sugar weighs about one pound.
