Yes, in all seriousness, the white plumber's tape will degrade and not last. Use the yellow tape for gas connections, not the white.

I used the pipe dope goop to seal the pipes. Was the yellow teflon tape the better choice?

No, that's ok. Pipe dope is just as good if not better than yellow tape.

I didn't get great results with the pipe dope, and it never seemed to really set up.

Most pipe dope will not set completely hard . This allows them to be fluid with expansion and contraction of the joint due to temperature and pressure keeping the joint sealed.
